Apple Cider Donuts

Yield: 8 Donuts
Ingredients:

60g butter 250g apple cider
375g AP Flour 20g sugar
5g salt 5g cinnamon
1g apple pie spice 5g yeast
cinnamon & sugar for dusting 1 cinnamon stick

1. Start by browning the butter on medium heat.
2. After 1 minute, add a cinnamon stick to the butter.
3. Continue to cook for another minute and then pour in the apple cider, then turn down the heat to low.
4. After another 1-2 minutes on low heat, pour this mixture to a container.
5. Excluding the dusting ingredients, mix all the dry ingredients in a food processor on medium.
6. Slowly stream in the cider-butter liquid to the food processor while mixing.
7. Flip the dough into an oiled medium-sized bowl, let this rise on the counter for about 2 hours.
8. Lightly flour work surface then the dough, roll bough into 8x12" rectangle, use ring molds to punch out 6-8 rounds, then punch out the holes.
9. Lay the cut donuts onto a lightly floured piece of parchment paper on a sheet tray.
10. Press scrap dough back together into rectangle about 1/2" thick and punch 2 more donuts.
11. Proof the donuts on counter covered with another sheet tray for 1 hour
12. Fry the donuts at 350 for 90 seconds per side. Drain on wire rack, then dust the donuts with cinnamon and sugar. Enoy!
