Ingredients:
| 1 lb ground beef | 16 oz sofrito |
| 1 bell pepper diced | 1/4 bunch of cilantro |
| 1 cup of monterey cheese | 8 empanada disks |
| 1/2 of a yellow nnion | (Optional) 1 habenaro |
| Lime juice of 1 lime | Adobo to taste |
| Salt to taste | Black pepper to taste |
| Sazon to taste | Paprika to taste |
| Garlic powder to taste | Cumin to taste |
1. Begin to cook the ground beef in a large pan over medium-low heat.
2. When the beef is about 3/4 of the way done, pour the sofrito and seasoning in, mix well.
3. Continue to cook for another few minutes until combined, add cilantro and lime juice if desired.
4. Pre-heat frying oil to 350, fill empanada disks with beef & sofrito mix, topping with cheese. Seal the edges of the disks with your fingers and close with the end of a fork, creating ridges along the side.
5. When the oil is at 350, drop the empanadas in, depending on the spacing of your cooking vessel, drop two at a time.
6. Fry for 7 minutes total, flipping the empanadas halfway through.
7. Take the empanadas out after the 7 minutes, dry off with a paper towel to remove excess oil.
8. Garnish slightly with salt and cilantro, Enjoy!
